S’more Pie

I know I make a lot of chocolate pies.  My family really likes them.  This was inspired by the classic marshmallow roasting tradition we share when we go camping with our family or scouts.  The fact that I found out how to make Marshmallow Cream Meringue made this one a must.

It has all the ingredients for the classic fireside treat…. graham crackers, chocolate and marshmallows.

This pie is as simple as

A Graham Cracker Crust

You need 24 graham cracker squares

1/4 cup sugar

1/3 cup melted butter

I put the graham crackers into a food processer or blender and process until fine crumbs. Then I add the sugar and butter and combine. It will still be very crumbly. You put it into the pie pan and press the bottom and up along the sides until it is evenly distributed. Bake in a 350 degree oven for about 12 minutes and then remove and cool.

marshmallow meringue topping (this is a basic meringue recipe with a 7 ounce jar of marshmallow cream added – I will put a recipe from The Southern Living Cake and Pie book below)

I also finish it with some graham cracker crumbs and chocolate chips over the top.  Feel free to serve it however you like.

I sometimes cheat a bit and use a chocolate pudding/pie filling mix instead of a chocolate pastry cream.  I prefer pastry cream but if you are having the kids help to make this one then, by all means, use the box mix.

If you have a mini kitchen blow torch (Creme Brulee torch) then you can toast the marshmallow meringue a bit to give it that fire kissed flavor or cook in the oven according to recipe below.
