Cranberry Orange Scones

These are perfect for brunch or holiday breakfasts… served with scrambled eggs, bacon or sausage, fruit, coffee/tea.  I have done them for Christmas morning over the years.  They are a favorite in our home.

½ lb AP flour

1 tsp heaping baking powder

3.5 ounces butter

½ Tbsp heaped sugar

Pinch of salt

1/3 cup Craisins (soaked in orange juice to plump)

Grated orange zest

1 large egg beaten

½ cup milk

Mix using Biscuit method – sift the dry ingredients (flour, baking powder, sugar and salt). Cut in the fat (the butter) add garnishes (craisins, orange zest) and then add egg and milk and work until it just comes together.  Shape the dough into a circle about 1 inch thick and you can cut 8 good sized triangles or 10 to 12 smaller serving sized triangles.  You can also use a biscuit cutter to cut circles.

You can brush the tops with an egg wash if you like but if you use a glaze after they come out of the oven it is not necessary.

Bake 350 degrees for about 30 minutes or until they are golden brown on top.

Make an orange glaze to drizzle on top to finish – powdered sugar and orange juice mixed thinly so it is easy to drizzle.

This is a simple recipe to use gluten free flour in instead of regular flour.  Just be aware that they are a bit grittier and are not as good leftover because they become more hard than regular flour biscuits.

    1. I edited it for clarity…. 8 good sized triangle shaped scones or you can cut 10 to 12 smaller sized. Thanks for saying something. LOL I put the post together last night when I was kinda headachy.
