31 Days – Autumn Harvest Pie

, , ,

For this month of October I will be sharing pies… a lot… with you.

I hope it inspires you to make a pie for your family for a special occasion.  Some will be my own recipes… like this one… and some will be pies I snagged from others over the years.  Where there is an opportunity to link you to a pie maker I will make sure to send you to the original recipe. Many of you that have followed me for years know that I tweak recipes I find all the time.

This month for the Write31days project my theme will be pies.  I will share a few other things but mostly pies.  If you have a question or a tip on pie making please feel free to share in the comments and I will do my best to answer whatever comes up.

This is a pie that won an award a few years ago when I was in culinary school.  As we see more and more harvest fruits in the grocery store this utilizes so many of those for a great seasonal and holiday pie for your family.

So, on to the first pie…

I used a crumb crust for this pie…

It turned out beautifully and took a silver…

Here is what I did…

Pie Crust

1 cup flour (AP flour)

1 tsp sugar

½ tsp salt

1/3 cup shortening or

( I used 3 Tbsp butter and 3 Tbsp shortening)

2-3 Tbsp ice water

Crumb Topping

½ cup butter

½ cup brown sugar

1 cup flour

Dash of cinnamon

Dash of nutmeg

Dash of allspice

Pinch of salt

½ cup chopped pecans

Cream butter. Mix everything else together with creamed butter and mix lightly to sprinkle over top of pie. Do not over mix.

Pie Filling

3 Granny Smith apples peeled and sliced

3 pears peeled and sliced

½ pint blueberries

2/3 cup dried cranberries

Orange peel

Orange juice from one small orange

½ cup sugar

Cinnamon

Allspice

Nutmeg

Ginger

Salt

Flour to thicken juice

Mix all together and let sit. Fill pie crust and top with crumb topping and bake 1 hour at 375 degrees or until golden brown on top.

This was an award winning ACF competition pie that I made.  All of my competition pies are original recipes that I have worked to develop so if you share any of them please give credit.  I appreciate it greatly!
